If you just don’t like the flavour of Baileys but still want a liqueur cheesecake feel free to substitute Baileys for another cream-based liqueur. Just make sure you use a cream-based liqueur, as a non-cream based liqueur might cause the cheesecake topping mixture to split. Baileys liqueur - I used the original flavour, but chocolate Baileys would add extra chocolate flavour to the truffles. If you are making these for children, substitute the Baileys with heavy or double cream. Cheesecake is much older than you might think!
