We were generous giving these pans 2.5 stars because at these prices, it's hard to say these pans are any kind of good value. Over the years, All-Clad has changed hands a few times. It is presently owned by the French kitchenware conglomerate Groupe SEB, who bought it in 2004. Groupe SEB owns several well-known American brands, including T-fal, Wearever, and Mirro.The All-Clad Brushed D5 Stainless Cookware Set is the most popular and bestselling cookware set from the brand. The D5 is made with a patented process that bonds five layers of metal together. The five layers are stainless steel, aluminum, stainless steel, aluminum, and stainless steel. All-Clad cookware is made in the USA from high-quality materials. The company has been making cookware for over 40 years, and its products are trusted by both home cooks and professional chefs. Also, as I cover in the next section, All-Clad offers a range of collections, some are less expensive than others. So, if you’re looking to spend less but still get incredible quality, you might be able to find a collection that fits your budget. Uncomfortable Handles As you can see in the chart below, All-Clad G5 and Copper Core are two of the fastest pans to heat up across the entire cookware industry. These results are not surprising since both pans have highly conductive core materials (G5 has a graphite core, and Copper Core is made with copper). If you want all-purpose clad stainless cookware, it's hard to beat All-Clad D3 (and now D3 Everyday). I touched on these throughout this article, but I want to reiterate a few things that you should know before you buy All-Clad cookware. Price The final attribute is the value of the cookware. By value, we mean more than just cost. Yes, initial cost is part of value, but so is cost-per-year-of-use. Value also has a subjective element to it, meaning if you love the cookware, you may be willing to pay a little more for it even if another set is just as good (or almost as good).But Collective doesn't offer these options, and for this reason, we aren't super impressed with the (expensive) Collective line. We know a lot of folks hate the old All-Clad handles. So now you can get a new-and-improved D3 design for less, which is definitely a win-win. Exposed Edges: Although All-Clad did not admit any wrongdoing, they recently settled a lawsuit over claims that the exposed edges become sharp when you clean the pans in the dishwasher despite their dishwasher-safe label. Since the settlement, All-Clad now recommends handwashing all pans. The internal layer of stainless slows down the lateral movement of heat (that is, how it spreads upward from the burner to the cooking surface), causing the heat to be slightly more evenly distributed by the time it hits the cooking surface. But as far as we can tell, it mostly just makes a pan heat more slowly. In our testing, we did not notice any significantly more even heating in D5 over D3.

In fact, cladding came into existence as an attempt to marry the two most important cookware properties, heating properties and durability. You can also toss your clad stainless cookware in the dishwasher, but the harsh detergents can take a toll on the finish--so hand washing is best. The graphite layer is only in the bottom, so the sides of the pan are traditional tri-ply, which probably doesn't change its heating properties all that much (not in any way we could tell, anyway). In fact, good heat capacity is almost a by-product of cookware with good thermal conductivity, because a pan with enough aluminum and/or copper to heat evenly is also going to have enough mass to hang onto heat well enough for most tasks.Copper Core pans perform differently than D5. Rather than responding slowly to temperature changes, these pans react incredibly fast due to their copper middle layer. This collection is for cooks who want more control over their cooking. It’s ideal for fish, onions, sauces, garlic, and other ingredients that require frequent temperature adjustments. What are good heating properties? You want heat to spread evenlyand rapidly throughout a pan, without hot or cold spots that can cause burning or uneven cooking. Using thinner layers of stainless and aluminum (resulting in cookware that heats unevenly, doesn't hold heat well, and is more prone to warping)
