I tested out his sauerkraut fritters - it just so happens that I had all of the ingredients in the house to begin with. Michal encourages readers to personalize recipes, so I did just that. I happened to have a beautiful batch of cabbage sauerkraut and beet sauerkraut, so why not use both in the recipe? The prep was easy to follow (and easy to do) and the cooking took no time at all. As a lover of (almost) all things fermented, I accidentally ate half of the results within a few hours, and I'm very okay with that.

The photography is great, and the instructions are well-written. I loved reading little tidbits about his family traditions. My one quibble: I really didn't want to know how much the author "hates raisins;" he mentions it at least twice. I guess he really doesn't like raisins! This book is perfect for anyone who intends to make Polish sausages or any kind of sausage. Even Polish butchers that make sausages all over the world make this book a point of reference. It is very scientific and appeals to the general public interested in sausage making or those in the “sausage trade.” Review 📖 Good food is a tradition in Poland. This is not the old fashioned Polish cooking I grew up with but a modern progression of Polish cooking through the use of different combinations and spices, but not out in left-field. Who could resist Polish desserts? Who hasn’t heard of Makowiec(poppy seed roll), Paczki(a Polish doughnut covered with glaze, icing, or sugar), Blueberry Mazurek(a sweet flat cake filled with blueberries that just melt in your mouth), or Sernik(traditional Polish cheesecake)? Well, If you haven’t, this book is definitely for you! Review 📖 I should also mention that many Poles like to eat sweet dishes also for a dinner. A good example is provided by nalesniki (Polish-style pancakes made from a very thin dough), knedle (dumplings stuffed with plums or poppy seeds), pierogi with a sweet curd cheese or noodles with fruit mousses.
