Socată or suc de soc is a traditional Balkan soft drink made from the flowers of the European elder (or elderberry) shrub, Sambucus nigra (soc in Romanian). It may be non-alcoholic or, usually, low-alcoholic, and can be carbonated or non-carbonated, depending on the fermentation type and duration. In June, the elder is at its finest, its leaves almost lost beneath the white of its flowers. The petals are small and clustered, but form an umbel that is broad and soporifically scented, like a dollop of perfume-infused, inflorescent ice-cream.
