Indeed, in 2021, travel guide TasteAtlas proclaimed our humble dish to be the best vegetable soup in the world! This should come as no surprise to us, either. After all, who can resist the warmth and comfort that a bowl of sinigang brings? Although a staple so common in every household, knowing that sinigang will be the main course of the day can’t help but elicit feelings of excitement and delight. No matter the weather nor the season, sinigang stands both the test of time and climate. This dish brings pleasure wherever it finds a home, and Filipinos continue to relish in its sour, but yummy taste. Where does sinigang come from? I am using spinach in this recipe. It is actually an alternative ingredient to kangkong (water spinach), which is the most common type of leafy green vegetable used when cooking sinigang. Pork Sinigang is delicious and easy to prepare. Note that this recipe will require to saute the onion and pork. Start by heating cooking oil in a cooking pot. Saute the onion until it gets soft. Add the sliced pork. We are using pork belly (or liempo) for this recipe. You may also use other pork slices such as shoulders or parts with bones. Add some fish sauce and continue to cook until the pork turns light brown. Slice the fish head into smaller serving pieces then transfer to a bowl. Rub each piece with salt and pepper to season. Let this sit for a few minutes. Use limes for more acidity and sourness. Since sourness levels are different for each person, you can adjust this recipe based on your personal preference. If you like EXTRA sour levels for your sinigang, I would recommend adding lime juice at the end to add more acidity and tanginess.

Step 5 Stir in eggplant, tomatoes, and shishito peppers. Partially cover and continue to simmer until vegetables are very soft and pork falls apart when broken up with a fork, 20 to 25 minutes more.

Peel the tamarind pods before soaking them. Some recipes call for soaking the pods with the shells, but I prefer peeling them to remove any excess debris. It’s important to soak the flesh because it makes removing the seeds easier. Make sure to cook the pork until very tender. I really mean it. You don’t want to challenge yourself by chewing the meat with all your might while the nice hot broth slowly cools down. Otherwise, enjoy the broth first before working on the meat.Sinigang is a Filipino meaty soup that is known for being sour and savory, and sometimes spicy. Serve it with rice and it is a complete meal on its own. There are, of course, different ways to prepare it and has a lot of variations.

Sinigang na Baboy (Pork Sinigang): Pork ribs or belly adds a rich, meaty flavor to the tangy tamarind broth. Here's a brief look at the steps for making sinigang. Be sure to refer to the full written recipe and watch the full video tutorial below to ensure success! For one, those who are more inclined towards fish and seafood have the option of fish sinigang. Whether it’s salmon, bangus, or even tilapia, fish sinigang makes use of the abundant seafood we Filipinos have at our disposal. To make this traditional recipe even more unique, I like to air fry my fish before adding it to the sinigang soup. This gives your tilapia a crunchier texture, while still being able to absorb all those dynamic flavors. Taro root, both larger or smaller roots will work, so choose whatever you prefer. Larger ones are a little starchier. Your vegetables already do an excellent job of absorbing all the flavors of your broth. If you want to add a little bit of spice, take one of your green peppers and put it in a bowl with patis, then split it open. Sprinkle your pepper- patis mixture onto your salmon, and you’ll have an even deeper layer of flavors you can enjoy! Sinigang recipe variationsSome Filipinos use ginger in their sinigang. I personally only use it when I parboil pork to get rid of its “gunk” but in the actual stew itself. Why is sinigang considered a Filipino identity? Chunky Tomatoes: Sauté half the tomatoes, then add remaining half with taro and string beans for more tomato chunks. If you’ve traveled enough and lived abroad for so long and has met a lot of fellow Filipinos hustling all over the world, it doesn’t take long to realize that one of the common things you’ll have with your fellow countrymen is food and almost every Filipino I know LOVE sinigang among others. Place in a saucepan with about 1 cup water and bring to a boil. Cook for about 4 to 5 minutes until soft, and the outer skins begin to burst. Onion and tomato brings-in flavor to the broth. Cook it during the initial steps. Some people like their tomato intact. If you are one of these people, I suggest to cook half of the tomato initially and add the remaining once the dish is almost done.
