Taken from 2020’s Prosecco Masters – which is a competition solely for the sparkling wine run by the drinks business – the 10-strong selection below represents the top performers from across a range of price points and styles, including the extremely dry to the richly sweet, or the low-priced to luxury level cuvée. When opening a bottle of prosecco, remember it will behave far better and more predictably if it has been left to sit and chill for a few hours. Warmth and/or rough handling both make for an explosive cork situation, meaning more mess and waste. Fizz should go into glasses, not onto ceilings. When sealed with a proper sparkling wine closure, Prosecco will usually last up to two or three days in the refrigerator, though some bottles’ lifespan will be slightly shorter or longer. Over the past decade or so, sales of the playful Italian sparkling wine known as prosecco have soared, and it’s no surprise why. As Champagne prices continue to climb—and the fervent interest in delicious bubbles remains as enthusiastic as ever—prosecco has emerged as the affordable, fruit-forward solution to satisfying one's sparkling needs. However, while every prosecco is made from the glera grape and hails from the same region in northeastern Italy, not all proseccos are created equal. So how to separate the lesser examples from the ones that are molto bene?

Prosecco DOC: The most common quality level of Prosecco which can be made in nine provinces spanning Veneto and Friuli-Venezia Giulia regions. If you are in the mood for something indulgent, with the mouth-filling richness that comes from something a little sweet, then Villa Sandi’s ‘dry’ Rive di San Pietro di Barbozza is a brilliant place to go. As with many of the very best Proseccos, there is quite a high level of sugar in the fizz, but, because of the aromatic, fresh orchard fruit flavours, the drink still refreshes. This Villa Sandi fizz treads that balance with particular finesse.Proving that great, layered refreshing fizz can be found within Prosecco – a sparkling made by re-fermenting the wine in a pressurized vat – was this class-leading Brut example from top producer Andreola. Although its winemaking method means it doesn’t have the bready, nutty characters you find in traditional method fizz, such as Champagne, it delivers something else: fresh, aromatic, juicy fruit, from peach and pear to lemon and lime zest, complemented by a lovely mouth-filling creamy textured fizz. Viewers were left baffled as to how Rose could ‘agree to disagree’ with Farage but still hold a grudge against Sireieix.

What’s important about these Proseccos is that the brands below were sampled without prior knowledge as to their source – the sparklers were tasted ‘blind’, which removes any risk of prejudicial judgments, which we believe is vital for the fair and accurate quality assessment of drinks. When seeking out the ideal bottle of Prosecco, consider looking to smaller producers rather than larger names. While big brands may be easier to find, the quality of the wine is likely going to suffer as compared to those from family-focused estates—and, as often as not, the smaller guys’ wines will cost you the same (if not less). character, it’s pure and bright, as well as juicy and ripe, and complemented by a lovely creamy-textured fizz. Quite dry by Prosecco standards, this expression delivers more fresh fruit than sweetness, and represents a serious style of Prosecco for a surprisingly affordable price point. From here on in, keep the bottle pointed away from yourself and anyone present, especially people's faces – about a 45 degree angle is good. By the way, if you haven’t had an Extra Dry Prosecco yet, this style offers a great balance between Prosecco’s fruit, tingly acidity, and subtle sweetness. How to Serve ProseccoProsecco is surprisingly versatile and pairs well with a wide range of cuisine genres and dishes. It’s one of those wines that can be served as an aperitif (before food) but also works well alongside the main entrée. This means Prosecco’s bubbles typically last longer than beer (which has approximately 1.5 atmospheres of pressure) and not usually as long as Champagne (5-6 atmospheres of pressure).
