About this deal

I had to overcome a few structural issues in constructing this cake. First of all, I had to secure a long wooden skewer to the doll, under her dress. This would be inserted deep into the cake (about 3″), so I wouldn’t have to worry about the doll tipping over! I secured it with 2 zip ties, TIGHTLY under the dress. Instead of angleing the legs I make one additional 9″ round cake layer and put it below the wilton mold cake. This usually means doubling the recipe. I love using fondant or our homemade buttercream frosting when I am decorating cakes with beautiful detail like these princess cakes. Fondant is great to get the smooth, flowy look. Buttercream frosting holds its shape well and it is easy to pipe so you can do all kinds of fun designs for your Barbie birthday cake. You will want about 6-7 cups of frosting to cover your cake if you are wanting to pipe the entire cake. This allows for some extra for dividing and color mixing. Tips for Decorating a Barbie Cake Now using a sharp knife trim the bodice into shape! Remember you can do any princess you want, so use the colors and bodice shape of the princess your trying to make.

Grease and flour your cake pans. You want to use 3 8-inch round cake pans and one ovenproof glass bowl. For the skirt, we did 2 colors. The top color was more heavy on the blue and the bottom was heavier on the lavender color. To get the “ombre” look, we filled one pastry bag with the blue, another one with the purple and then put BOTH bags (no tips in either bag) in one bag with the star tip. That way the two colors combined without mixing too much. It gave it more of a swirled look.

Cover the seam where the bodice and skirt meet… And now time to add the criss crossing of the ribbon onto the bodice. I rolled out the pink really thin, and then using a pizza cutter cut it really narrow. This way I didn’t have to try to roll it evenly into such a small snake! I painted the bodice with clear vanilla (see, you can’t even see it!). Now one strip at a time start cutting and building the criss crossing! Her skirt is all shiny, so using a brush (not one you EVER use with paint or make up or anything, JUST for food!!! Anyway, use the brush and edible glitter, or luster dust! If you are using a Rapunzel doll, you also want to wrap her hair up so it doesn’t get in your way. I secured it on top of her head with another rubber band. I think I might have impressed myself with this one. At least at 2 a.m. when I finished up, I thought it might be my best culinary masterpiece to date.

Find your “molds”.The “skirt” of the cake is baked in one or two 8″ cake pans and an oven-safe glass bowl (or two glass bowls, one medium-sized and one small sized). That’s all you’ll need for the base of the cake, or the skirt. Get creative with what you have. Just make sure the bowls you are using are oven safe. A ceramic or stoneware mixing bowl will work great. The size of cake will fit any Barbie-size princess doll or Barbie doll. After the cake is good and chilled, start covering the whole mountain with frosting. I chose to do the paper drag again to give me a smooth surface. I covered the pretty section with some luster dust and then to bring out the detail I painted the lines with a paint brush and clear vanilla! It means to make a thin layer to cover the cake. You can make it smooth by taking a piece of paper and curve it slightly, from the bottom to the top use the edge to create a smooth surface. Shear the tops of your cakes so that they have an even surface. A serrated knife works best, and if you freeze them for about 45 minutes, that will help keep crumbs to a minimum. The small bowl with lighter purple was for her sleeves, some of the bodice and the inside of her skirt. I used Duff’s (love Duff!) Color Gels. Since I doubled the cake, I doubled this too – and again had a lot left over. But I was paranoid about running out. Also, this was a little bit runny for me – but it actually worked well when it came to decorating that it wasn’t so stiff.

In the fold of her skirt, I added dark purple swirls (again with the Princess Shimmers) and in the middle of each flower placed an edible pearl. I also used the silver shimmer again to fill in some more texture to mimic the glitter on her actual skirt. I also added some definition to the fold in her skirt with the purple and outlined the bottom of the dress. Instead of buying an expensive Disney princess cake, you can make your own at home!
