Store the bottles upright and away from sunlight, at or above 18°C for at least 2 weeks to allow the secondary fermentation to take place. Recall the rule of thumb about the lager time frame being double of that for ales. If your ales typically finish fermenting in 7–10 days, 2–3 weeks is a good estimate for a lager. But, as with all fermentations, let the hydrometer or refractometer be the deciding factor rather than the calendar. In general, consider fermentation nearly finished when the reading is within a point or two of the target final specific gravity. Give it a rest

Taste best served chilled.The malt remains forward as we taste, still quite bready, with some slight sweetness to it. We get some stone fruit drifting into the flavour profile in the form of apricot, as well as some slight floral and citrus notes. The carbonation is quite tight and the mouthfeel is pretty good, though on the verge of wateriness. We get a sweet malty finish to the drink. For me it isn’t about the low calories or vegan friendly (although I’m not complaining). All about the taste and days is one of the best I’ve found. Days was founded earlier this year by Mike Gammell and Duncan Keith. Gammell previously worked for ZX Ventures as a manager and Keith for food companies Proper Corn and Genius Food. Days is my first try and I must say both the Pale Ale and Lager are spot on for me. Light and crisp, lovely out of the fridge and for me tastes just like an alcoholic beer. Rinse or soak all brewing equipment in water until caked on residue is softened. Note: Avoid any forms of detergent or soap unless specifically made for brewing

Some lager yeast strains produce sulfur compounds — particularly hydrogen sulfide (H2S) — during fermentation, resulting in somewhat unpleasant odors that are disturbing to the unsuspecting. Don’t be too concerned about these, although you may wish to inform others with whom you share your living space. With time and proper conditioning, these will dissipate and disappear entirely from the finished beer. Remove residue with a soft cloth and rinse thoroughly. Note: Do not use any cleaning aid that may scratch the plastic.
