Nisha Katona recipes - BBC Food

Ingredients: mustard seeds; fenugreek seeds; asafoetida powder; green chillies; dried red chillies; beetroots; lemons This was really really delicious. I could only find a recipe for the chip butty online but not the two chutneys so I had to make do. I used a very spicy garlic chilli chutney instead of the mowgli chutney on the roti and as a dip on the plate. I skipped the green chilli chutney altogether. It didn’t taste like anything was missing.

Add the chopped aubergine and potato with the salt and stir together before adding the chopped tomatoes, tomato purée, spices and the sugar. Cover with the pan lid and cook for 8–10 minutes, or until the vegetables start to soften. Stir in the kale until wilted, then add the lemon juice and garam masala. Before serving, taste for seasoning, adding salt or sugar, as needed. Add more water if it’s looking a bit dry.
