I like the flavor of Italian sausage so I used that but other versions use ground meats. Also in my house I always have homemade marinara stashed in my freezer seasoned with garlic and basil, so that’s what I used here, s you can make homemade yourself or to make things easier and go a little faster you can use a good quality store bought one, I repeat… Good Quality! ( I won’t tell). Anelletti al forno with eggplant is a classic Sicilian baked pasta made with meat ragu and peas, eggplant, hard boiled eggs and anelletti, a small ring shaped pasta of Sicilian origin. This impressive pasta dish is prepared on special occasions or for Sunday lunches with family.

With dried pasta rings, anellini or anelletti are generally smaller than anelli. But, homemade anellini pasta rings from Abruzzo are bigger. I guess it’s difficult to make very tiny ones by hand! How to make homemade anellini pasta rings. Nearly all recipes for homemade anellini alla pecorara call for sautéed egpplant, zucchini and bell peppers. The latter can be any colour but I prefer red, yellow or orange. This time, I used one red pepper and one yellow. These are all summer veggies, although nowadays we can find them year-round. Some recipes also include mushrooms but not the one I followed. Of course, you can add them too. Sauté the cubed vegetables with olive oil and garlic So, anellini alla pecorara is a dish of a particular type of pasta and sauce eaten together. In Abruzzo, you can find fresh anellini to buy in many food stores. Interestingly, the pasta is sold as anellini alla pecorara or pecorara di Elice. Although, many locals still make this pasta themselves. Outside of the region, the only way to enjoy this dish in its authentic form is to use homemade pasta, which is what we did. What is anellini pasta? Today, anelli can be found not only throughout Italy but also all over the world. It is especially popular in Puglia and Sicily, where its use isn’t limited to being served as pasta in a can. What Does Anelli Mean?I am going to start out by saying that one thing you will never find on my blog is a one pot Pasta dish. I firmly believe as does every Italian I know, that pasta needs to be cooked in it’s own large pot of boiling salted water. Cover the top of the pasta with the slices of eggplant hanging over the sides of the pan. Top with additional eggplant slices to completely cover the pasta. Caciocavallo cheese: cut into cubes. Other cheeses such as mild provolone or mozzarella may be substitued. To make the pasta for this recipe you will need both Italian ‘00’ soft wheat flour and durum wheat semolina flour. Most recipes call for equal amounts of both, plus eggs and sometimes water and olive oil too. I used 150g of each flour, 2 eggs, a little water and a teaspoon of olive oil. You can use 3 eggs instead of adding water and olive oil and all-purpose flour instead of the Italian ‘00’ flour. Put the flours and eggs in a bowl. Add salt, olive oil and water. Mix together until you have a dough. Knead the dough on a work surface. Let it rest and then make the pasta rings.

Meanwhile, in a large, heavy-based pan, warm the oil and butter, and gently fry the onion, celery, carrot, rosemary and a pinch of salt until soft and translucent.If you prefer a meatless version, omit the meat and add chunks of fresh mozzarella instead, believe me it’s all good! Although I have read that this recipe originally had some meat in it, the majority of versions today are mostly vegetarian ones. The pasta is dressed with a tomato sauce mixed with sheep’s ricotta, sautéed vegetables and pecorino. Of course, pecorino isn’t actually vegetarian as it contains animal rennet. Strict vegetarians can leave it out or use a vegetarian hard cheese. Step 3 Make the tomato sauce. First sauté finely chopped onion, celery and carrot in olive oil.

But the good news is you can easily breakdown the tasks into manageable steps.
