My advice is to take a bus into Palma and maybe get a light bite in a restaurant before seeing the parade. White Port – Briefly aged before bottling, these are meant to be drunk young, and range from crisp dry wines, best served with tonic, ice and lemon, to sweeter versions, which go well with puddings. There are some aged white ports, too. The 7 January (if this falls on a weekday) normally signals the return to school for children and the end of the Christmas season. In the past, tawny Port was largely drunk by the Portuguese whereas the British drank the vintage stuff. Now, however, tawny sales are booming over here. This 10 year old version from one of the great names the Douro never disappoints. It’s one to give to people who think they don’t like Port. Few can resist a chilled glass of Noval 10 Year Old. True vintage Port is only made in the best years, it’s aged for a couple of years in wood, and then will need at least 20 years to mature in bottle. At 23, this Croft is now really singing. You’ll need to stand it up for at least a day, before opening and decanting carefully (see our guide). Then you’ll be rewarded with herbs, cloves, and stewed red fruit. Serve with a nice bit of Stilton.

Tawny Port – After being aged in oak barrels, tawny ports are further aged in bottles for periods such as ten, 20, 40 years, etc. The name comes from the tawny colour they develop over time and they tend to be very smooth and mellow, with flavours of fruit and nuts. They go well with cheeses and some puddings. The big Mallorca Christmas lights switch on doesn’t just happen in Palma but also all over the island. Some towns such as Alcudia Old Town may switch on their Christmas lights a week later. Crusted Port – A blend of outstanding young ports from two or three harvests, these are left to mature in the bottle, forming a “crust” (natural sediment) as they age. The great thing about Christmas is that no one – or at least practically no one – minds if you play it by the book. In fact, if anything, they tend to be mildly reproachful if you don’t.
