Foursquare Distillery is always praised for its Exceptional Cask Selection limited releases, but sometimes it overshadows their main continuous brand, Doorly’s. Doorly’s XO is molasses based, pot and column distilled, aged for 5 years in ex-Bourbon casks and up to 3 more years in ex-Oloroso sherry barrels. The 12-year-old rum has notes of tropical fruits, toffee, banana, vanilla and tobacco, with a long warming finish from being secondary aged in sherry casks.

This expression of Doorly's Fine Old Barbados Rum was aged in small, American White Oak casks for a full 14 years resulting ina rum that has a complex character with a delicate aroma that can only come from time. Not my fave, as I immediately shared other peoples' views in that it's quite a dry Rum and I also prefer something a little more spiced and potentially with more sugar (El Dorado 15, Zapaca 23 or MG Black Barrel).

Yes, it’s quite woody, but the Madeira cask rum really balances that out by giving it plenty of red and dried fruits notes. However the distillation of Rum did not become as popular in Barbados until 1906 due to the Rum Duty Act! Innovation means that distillation is performed under vacuum and thus at a lower temperature producing a better quality spirit.

While I’m sure it was a business decision as well, one of the reasons for incorporating all these labels under the R. Martin Doorly evolved into Doorly’s Macaw Rum, and became the first bottled rum exported from the island.This is not just a 12 year old rum, it’s a blend of rums that have been aged separately for 12 years in ex-Bourbon and ex-Madeira casks before being blended together. I get a lot of vanilla, caramel, raisins and coffee on the palate, with a hint of sherry and nice little kick imilar to what you'd get if you were to drink a bourbon, it's a very welcome one though for only being 43%. Martin Doorly evolved into Doorly's Macaw Rum, and became the first bottled rum exported from the island. It is quite layered, but as I said the finish is a little short, which is fine, this is meant to be mostly a mixing rum, and it fulfills its purpose perfectly. Current head distiller, Richard Seale, is one of the region’s most innovative distillers and blenders and has a passion for producing perfect rum with great flavour.
