Chicken is one of the most versatile ingredients a home cook can learn to work with, and this cookbook puts that to the test with 50 recipes that pair the protein with a variety of vegetables, grains, and spices. Each meal (some when served with the suggested side dish recipe) is complete with carbs and veggies.
For the salad, though, she found the lettuce had a “slightly slimy” texture, but all of the other components (the chicken, croutons, and dressing) were delicious and made for great leftovers for an un-roasted Caesar salad the next day. There is a way of eating delicious, vibrant, amazing food but also food that is conscious, that has a light footprint. With these guidelines in place, we bought a lot of chicken and put our sheet pans, Dutch ovens, and skillets to work to test out these cookbooks.By the end of the recipe testing, the three of us—Judith, Jo-Anne, and Michelle—all seemed to agree that this book may not make the most of roasting chicken, limiting itself with only using a sheet pan. Not only does it include fried chicken (always a winner in these parts) but also benefits from the addition of grapes, olives, sage, garlic and wine.

Paprika, cumin, garlic powder, allspice, turmeric, Madras curry powder, nutmeg and cinnamon make up the core of her dried spices. However, we did find some of her instructions to be confusing, and this may have impacted the results of the recipes we tested. And it's actually been the part of the book that I think people seem to be referring to most, because I think it is just a really good jumping off point. And so for now if I want to wow people with an outstanding ragù type recipe I will continue to use this one from Tim Siadatan (of Padella and Trullo fame). It's just got this sweetness from the honey, but a real interesting, rounded flavor from the sesame. With over 100 recipes, ONE features an innovative array of never-seen-before techniques, tricks and hacks to cut down on the washing up – even the pasta dishes don’t require a second pan of boiling water.The book is more limited in focus than the other books on this list, emphasizing roasting and, of course, what you can accomplish with a single sheet pan. The downfall to all of these recipes was that the book was text-heavy, and felt more like a manual than an engaging, narrative-driven cookbook. That moment where we couldn't get a bag of flour and everyone was running around trying to get their hands on eggs, I think it really changed stuff for me in the kitchen. Suzy Chase: I love your one vegetable chapter because so often, I want to make broccoli, squash, peas, potatoes and I can't think of any interesting variations. You think about it is as a book in school, and you just see a picture of the farmer, and then a picture of the piece of corn.
